Chicken Marbella

Ingredients:
1 whole chicken (cut into pieces or just chicken thighs)
¼ cup olive oil
4 garlic cloves (smashed)
2 tablespoons dried oregano
½ cup red wine vinegar
½ cup prunes (pitted)
¼ cup green olives
2 tablespoons capers (with juice)
2 bay leaves
¼ cup brown sugar
½ cup white wine
Salt and pepper (to taste)
Instructions:
Prepare Marinade:
In a large bowl, combine garlic, oregano, prunes, olives, capers, red wine vinegar, olive oil, salt, and pepper.
Marinate Chicken:
Add chicken to the marinade, mix well, and refrigerate overnight or for at least 2 hours.
Preheat Oven:
Set the oven to 350°F (175°C).
Arrange Chicken:
Place the marinated chicken in a single layer in a baking dish and pour the remaining marinade on top. Sprinkle brown sugar over the chicken and pour the white wine around it.
Bake:
Roast for 50 minutes to 1 hour, occasionally basting with the pan juices. Ensure the chicken reaches an internal temperature of 165°F (74°C).
Serve:
Remove from the oven, let cool slightly, and serve with fresh parsley or a squeeze of lemon if desired.
Tips:
For the best flavor, marinate the chicken overnight.
Baste every 15-20 minutes to keep the chicken moist.
Serve over couscous or roasted vegetables for a complete meal.
