Coconut Lime Beef Curry with Jasmine Rice

Ingredients:
For the Beef Curry:
1 lb (450 g) beef stew meat, cut into bite-sized cubes
2 tablespoons vegetable oil
1 onion, finely chopped
3 cloves garlic, minced
1 tablespoon ginger, minced
2 tablespoons red curry paste (adjust to taste)
1 can (400 ml) coconut milk
1 cup beef broth
Juice of 1 lime
Zest of 1 lime
1 tablespoon fish sauce
1 tablespoon brown sugar
1 red bell pepper, sliced
1 cup snow peas
1 cup carrots, sliced
1 tablespoon fresh cilantro, chopped (for garnish)
Salt and black pepper to taste
For the Jasmine Rice:
1 cup jasmine rice
1 1/2 cups water
1/2 teaspoon salt
Instructions:
Prepare the Jasmine Rice:
Cook the Rice:
Rinse the jasmine rice under cold water until the water runs clear.
In a medium saucepan, combine the rice, water, and salt. Bring to a boil over high heat.
Once boiling, reduce the heat to low, cover the saucepan with a lid, and simmer for 15 minutes.
Remove from heat and let it sit, covered, for an additional 10 minutes. Fluff with a fork before serving.
Prepare the Beef Curry:
Brown the Beef:
In a large skillet or Dutch oven, heat the vegetable oil over medium-high heat.
Add the beef cubes and cook until browned on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.
Sauté Aromatics:
In the same skillet, add the chopped onion and cook until softened and translucent, about 3-4 minutes.
Add the minced garlic and ginger, and cook for an additional 1 minute until fragrant.
Add Curry Paste:
Stir in the red curry paste and cook for 1-2 minutes to release its flavors.
Make the Curry Sauce:
Return the browned beef to the skillet. Pour in the coconut milk and beef broth, stirring to combine.
Bring to a simmer and cook for 15-20 minutes, or until the beef is tender and the sauce has thickened slightly.
Add Vegetables:
Add the red bell pepper, snow peas, and carrots to the curry. Continue to simmer for an additional 5-7 minutes, or until the vegetables are tender but still crisp.
Season the Curry:
Stir in the lime juice, lime zest, fish sauce, and brown sugar. Adjust seasoning with salt and black pepper to taste.
Garnish and Serve:
Garnish the curry with chopped fresh cilantro.
Serve the curry over jasmine rice.
Tips:
Beef: For the best results, use a cut of beef suitable for slow cooking, such as chuck or stew meat, as it becomes tender and flavorful when simmered.
