Ingredients:

- 1 lb chicken thighs, boneless and skinless, cut into bite-sized pieces

- 1/2 cup cornstarch

- 1/2 cup all-purpose flour

- 1 tsp baking powder

- 1/2 tsp salt

- 1/2 tsp black pepper

- 1/2 cup water

- Oil for frying

For the sauce:

- 1/4 cup honey

- 2 tbsp soy sauce

- 1 tbsp fish sauce

- 1 tbsp lime juice

- 1 tsp ground black pepper

- 2 cloves garlic, minced

- 1-2 Thai bird chilies, sliced (adjust to taste)

- Fresh cilantro for garnish

Directions:

In a mixing bowl, combine cornstarch, all-purpose flour, baking powder, salt, and black pepper. Gradually add water, whisking until you achieve a smooth batter. Dip the chicken pieces into the batter, ensuring they are well coated. Heat oil in a deep pan over medium-high heat. Fry the chicken in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

In a separate saucepan, combine honey, soy sauce, fish sauce, lime juice, ground black pepper, minced garlic, and sliced chilies. Cook over medium heat until the sauce thickens slightly, about 3-5 minutes. Toss the crispy chicken in the sauce until well coated.

Serve hot, garnished with fresh cilantro. Enjoy the delightful balance of sweet, spicy, and savory flavors in this Crispy Thai Honey Pepper Chicken!
