Dragon Chicken

Ingredients:
- 500g boneless chicken, cut into bite-sized pieces
- 2 tbsp cornflour
- 2 tbsp all-purpose flour
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red chili powder
- 1/2 cup vegetable oil for frying
- 1 tbsp ginger-garlic paste
- 1/2 cup bell peppers, diced (red and green)
- 1/2 cup onion, diced
- 2-3 green chilies, slim
- 2 tbsp soy sauce
- 1 tbsp chili sauce
- 1 tbsp tomato ketchup
- 1 tsp vinegar
- 1 tsp sesame oil (optional)
- Spring onions for garnish
Directions:
In a mixing bowl, combine chicken pieces with cornflour, all-purpose flour, salt, black pepper, and red chili powder. Mix well to coat the chicken evenly. Heat oil in a pan over medium heat and fry the chicken pieces until golden brown and cooked through. Remove and drain on paper towels. In the same pan, add ginger-garlic paste, diced bell peppers, onions, and green chilies. Sauté until the vegetables are slightly tender. Add the fried chicken back to the pan. Pour in soy sauce, chili sauce, tomato ketchup, and vinegar; toss everything together to coat the chicken and vegetables in the sauce. Drizzle with sesame oil if using. Cook for an additional 2-3 minutes until everything is heated through. Garnish with chopped spring onions before serving. Enjoy your spicy and flavorful Dragon Chicken!
