Ingredients:
2 lbs pork ribs (baby back or spare ribs)
1/4 cup soy sauce
2 tablespoons brown sugar
2 tablespoons gochujang (Korean chili paste)
1 tablespoon sesame oil
4 cloves garlic, minced
1-inch piece ginger, grated
2 tablespoons rice vinegar
1 tablespoon honey
1 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional for extra heat)
Sesame seeds (for garnish)
Chopped green onions (for garnish)
Directions:
In a bowl, combine the soy sauce, brown sugar, gochujang, sesame oil, garlic, ginger, rice vinegar, honey, black pepper, and red pepper flakes (if using). Mix until well combined.
Place the ribs in a large resealable plastic bag or a shallow dish. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours (preferably overnight).
Preheat your grill or oven to medium-high heat. If using an oven, preheat to 375°F (190°C).
Remove the ribs from the marinade and let any excess drip off. Reserve the marinade for basting.
Grill the ribs for about 3-4 minutes per side, basting with the reserved marinade, until they are caramelized and cooked through (internal temperature should reach at least 145°F or 63°C).
If using the oven, place the ribs on a baking sheet lined with foil and bake for 25-30 minutes, basting with the marinade halfway through.
Once done, let the ribs rest for a few minutes before slicing. Garnish with sesame seeds and chopped green onions before serving.
