Filet Mignon with Herb-Butter Sauce and Mushrooms

Ingredients:
4 (6-ounce) filet mignon steaks ( make sure they are rooms temperature)
1 tablespoon olive oil
Salt and freshly ground black pepper
4 tablespoons unsalted butter
1 teaspoon minced garlic
1 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped fresh thyme
1 tablespoon finely chopped fresh rosemary
8 ounces mushrooms, sliced
½ cup beef broth
Directions:
Preheat your oven to 400°F (200°C).
Season the filet mignon steaks with salt and pepper. Heat olive oil in a large skillet over high heat. Sear the steaks for 2-3 minutes on each side until nicely browned.
Transfer the steaks to a baking tray and place in the oven to cook for 5-7 minutes for medium-rare.
While the steaks are in the oven, reduce the skillet heat to medium. Add butter and garlic, cooking until the garlic is fragrant.
Add mushrooms and sauté until they are soft, about 5 minutes. Stir in herbs and beef broth, and simmer the mixture until it thickens slightly.
Remove the steaks from the oven, and let them rest for a few minutes.
Serve the steaks topped with the mushroom herb-butter sauce.
