Fresh Cod with Tomato Basil Sauce

Enjoy this bright, Mediterranean-inspired cod with a savory tomato basil sauce
Ingredients:
For the Tomato Basil Sauce:
2 tablespoons olive oil
1/4 teaspoon crushed red pepper flakes
3 garlic cloves, finely minced
1 pint cherry tomatoes, halved
1/4 cup vegetable broth
1/2 cup fresh basil, finely chopped
2 tablespoons lemon juice
1/2 teaspoon lemon zest
1/2 teaspoon salt (adjust to taste)
1 teaspoon sugar
1/4 teaspoon black pepper (adjust to taste)
For the Cod:
2 tablespoons olive oil
1 1/2 pounds fresh cod, cut into 4 fillets
Salt and pepper to taste
Instructions:
Prepare the Tomato Basil Sauce:
In a large sauté pan over medium heat, warm the olive oil. Add the crushed red pepper flakes and minced garlic, cooking for about a minute until the garlic becomes fragrant but not browned.
Add the cherry tomatoes and cook, stirring occasionally, until they start to soften and blister, around 8-12 minutes.
Pour in the chicken or vegetable broth, stirring to combine. Add in the chopped basil, lemon juice, lemon zest, salt, sugar, and pepper, and cook for another 2 minutes. Taste and adjust seasoning as needed.
Transfer the sauce to a bowl and set aside.
Cook the Cod:
In a large nonstick pan, heat olive oil over medium heat. Pat the cod fillets dry with paper towels, then season both sides with salt and pepper.
Place the cod fillets in the hot oil and cook until golden brown, about 3 minutes per side, or until the fish is cooked through, flipping carefully.
Serve:
Pour the tomato basil sauce over the cod in the pan, allowing the sauce to warm through for about a minute.
Serve immediately with extra fresh basil, if desired.
