Golden Thyme Potato Terrine

INGREDIENTS
Potatoes
6 large Yukon Gold potatoes, peeled
1 ½ tsp kosher salt
½ tsp black pepper
Cream Mixture
1 ½ cups heavy cream
2 garlic cloves, minced
4 tbsp unsalted butter, melted
1 tsp fresh thyme leaves
Optional Topping
¼ cup grated Gruyère or Parmesan
Extra thyme for garnish

INSTRUCTIONS
Preheat oven to 170°C / 340°F. Line a loaf pan with parchment.
Thinly slice potatoes with a mandoline (2-3 mm thick).
Mix cream, garlic, butter, thyme, salt, and pepper in a bowl.
Layer potato slices in the pan, brushing each layer with cream mixture.
Repeat layers until pan is full, pressing down gently.
Cover tightly with foil and bake for 1 hour 15 minutes
Remove foil, sprinkle cheese if using, and bake uncovered 15 more minutes until golden.
Let cool at least 20 minutes, then invert and slice into thick portions.
Garnish with fresh thyme
Serve warm or at room temp — perfect for elegant dinners!
