Grilled Beef Kebabs

Ingredients:
1.5 lbs beef sirloin or tenderloin, cut into 1-inch cubes
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
8-10 cherry tomatoes
Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes before assembling kebabs)
Salt and pepper to taste
Marinade:
1/4 cup olive oil
3 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1 tablespoon honey or maple syrup
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
Juice of 1 lemon
Freshly chopped parsley or cilantro for garnish (optional)
Instructions:
Prepare the Marinade: In a small bowl, whisk together olive oil, minced garlic, soy sauce, Worcestershire sauce, Dijon mustard, honey or maple syrup, smoked paprika, ground cumin, and lemon juice.
Marinate the Beef: Place the beef cubes in a large resealable plastic bag or shallow dish. Pour the marinade over the beef, making sure all pieces are coated evenly. Seal the bag or cover the dish with plastic wrap. Refrigerate and marinate for at least 1 hour, preferably up to 4 hours, turning occasionally.
Assemble the Kebabs: Preheat your grill to medium-high heat. Thread the marinated beef cubes onto skewers, alternating with pieces of bell peppers, onion, and cherry tomatoes. Leave a little space between each piece to ensure even cooking.
Grill the Kebabs: Lightly oil the grill grate. Place the assembled kebabs on the grill. Grill for about 10-12 minutes, turning occasionally, until the beef is cooked to your desired doneness and the vegetables are tender and slightly charred.
Serve: Remove the kebabs from the grill and let them rest for a few minutes. Sprinkle with salt and pepper to taste. Garnish with freshly chopped parsley or cilantro if desired. Serve hot with your favorite side dishes like rice, salad, or grilled vegetables.

Marinating time: 1-4 hours
Grilling time: 10-12 minutes
Total time: 1.5 - 5 hours (including marinating time)
