This Hot & Crispy Cantonese Chili Chicken is a delightful dish that packs a punch with its spicy and savory flavors. Perfect for a weeknight dinner or entertaining guests, this recipe is sure to impress. The crispy texture of the chicken combined with the bold chili sauce creates a mouthwatering experience that will leave everyone craving more!


Ingredients:


- 500g boneless chicken thighs, cut into bite-sized pieces

- 1/2 cup cornstarch

- 1/4 cup all-purpose flour

- 1 tsp baking powder

- 1/2 tsp salt

- 1/2 tsp black pepper

- 1 large egg, beaten

- Oil for frying

- 2 tbsp vegetable oil for sauce

- 3-4 dried red chilies, chopped

- 3 cloves garlic, minced

- 1-inch piece ginger, minced

- 1/4 cup soy sauce

- 2 tbsp rice vinegar

- 1 tbsp sugar

- 1/2 tsp sesame oil

- 2 green onions, chopped for garnish


Directions:


In a mixing bowl, combine cornstarch, all-purpose flour, baking powder, salt, and black pepper. Dip the chicken pieces into the beaten egg, then coat them in the flour mixture, ensuring they are well covered. Heat oil in a deep pan over medium-high heat. Fry the chicken in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.


In another pan, heat 2 tablespoons of vegetable oil over medium heat. Add chopped dried red chilies, minced garlic, and ginger, sautéing until fragrant. Pour in soy sauce, rice vinegar, and sugar, stirring until the sugar dissolves. Add the crispy chicken to the sauce, tossing to coat evenly. Drizzle with sesame oil for added flavor.


Garnish with chopped green onions before serving. Enjoy this spicy and crispy Cantonese chili chicken with steamed rice or noodles for a delicious meal!
