Indonesian Spicy Beef Rendang

Ingredients:


2 lbs beef chuck, cut into cubes

2 cups coconut milk

3 tbsp chili paste

4 cloves garlic, minced

1-inch ginger, minced

1 stalk lemongrass, bruised

1 cinnamon stick

3 kaffir lime leaves

1 tbsp tamarind paste

1 tbsp sugar

2 tbsp vegetable oil

Instructions:


Heat oil in a pot and fry garlic, ginger, and chili paste until fragrant.

Add beef and brown on all sides.

Pour in coconut milk, lemongrass, cinnamon, lime leaves, tamarind paste, and sugar.

Simmer for 2-3 hours until beef is tender and sauce has thickened.
