Japanese Chicken Katsu Curry

Ingredients:


1 lb chicken breasts

1 egg, beaten

1 cup breadcrumbs

1/2 cup flour

1 onion, chopped

1 carrot, chopped

2 potatoes, cubed

2 tbsp curry powder

1 tbsp oil

2 cups chicken broth

Cooked rice

Instructions:


Coat chicken breasts with flour, dip in egg, and then breadcrumbs.

Heat oil and fry the chicken until golden brown. Set aside.

In the same pan, sauté onion, carrot, and potatoes for 5 minutes.

Add curry powder and stir.

Pour in chicken broth and simmer for 20 minutes, or until vegetables are tender.

Slice chicken and serve over rice with curry sauce.
