Lemon Burrata Pasta Salad

Bright, creamy, and full of texture—this pasta salad brings fresh lemon, rich burrata, and nutty crunch to every bite.
Ingredients:
½ lb girelle pasta
1 cup grated Parmigiano Reggiano
1–2 cups arugula
¼ cup chopped pistachios
8 oz burrata cheese
½ cup extra virgin olive oil
Juice of 1–2 lemons
Basil pesto, to taste
Salt and pepper, to taste
Instructions:
Cook pasta:
Boil salted water, cook pasta until al dente, then drain and cool.
Make vinaigrette:
In a jar, combine olive oil, juice of 1 lemon, salt, and pepper. Shake well.
Mix salad:
In a bowl, toss pasta with arugula, Parmigiano, and vinaigrette. Add extra lemon or arugula if needed.
Plate & finish:
Serve with burrata on top, drizzle with pesto and olive oil. Sprinkle pistachios and more cheese before serving.
