Mango Habanero Chicken Skewers

Sweet, spicy, and smoky chicken skewers with a tropical kick — perfect for summer grilling or a fiery appetizer!
Ingredients (Serves 4)
1.5 lbs (680 g) boneless, skinless chicken breasts or thighs, cut into 1–2 inch pieces
1 ripe mango, peeled and diced (or 1/2 cup mango puree)
1–2 habanero peppers, seeded and finely chopped (adjust for spice preference)
2 cloves garlic, minced
2 tbsp olive oil
1 tbsp lime juice
1 tsp smoked paprika
Salt and black pepper, to taste
Skewers (if using wooden skewers, soak in water 30 minutes prior)
Optional garnish: chopped cilantro, lime wedges
Instructions
Prepare the marinade:
In a blender or bowl, combine diced mango (or mango puree), habanero, garlic, olive oil, lime juice, smoked paprika, salt, and pepper. Blend until smooth.
Marinate the chicken:
Toss chicken pieces in the mango-habanero marinade, making sure each piece is well coated. Cover and refrigerate for at least 30 minutes, up to 2 hours.
Assemble the skewers:
Thread the marinated chicken pieces onto skewers.
Preheat the grill:
Heat grill to medium-high and lightly oil the grates to prevent sticking.
Grill the chicken skewers:
Grill skewers 4–5 minutes per side, basting occasionally with leftover marinade, until chicken is cooked through (internal temperature 165°F / 74°C) and lightly charred.
Serve:
Place skewers on a platter and garnish with chopped cilantro and lime wedges. Serve with rice, salad, or a refreshing tropical drink.
