Massaman Beef Curry

Ingredients:
1 lb beef chuck, cubed
2 tbsp Massaman curry paste
1 can (14 oz) coconut milk
2 potatoes, peeled and cubed
1 onion, chopped
1/4 cup roasted peanuts
1 tbsp brown sugar
1 tbsp vegetable oil
Cooked jasmine rice
Instructions:
Heat oil in a pan, sauté curry paste for 1 minute.
Add beef and cook until browned, add 1 cup of beef broth and simmer the meat for estimated 1 hour make sure it’s tender and shreds easily
Stir in coconut milk, Add potatoes and onion, simmer until potatoes and sugar, simmer for about 20 minutes the potatoes should be fully ready.
