Mediterranean Chicken and Rice

A delicious and flavorful one-pan meal that brings the taste of the Mediterranean right to your dinner table.


Ingredients:


1 lb chicken breasts, cut into bite-sized pieces

1 cup long-grain white rice

1 ½ cups chicken broth

1 can diced tomatoes, drained

1 red bell pepper, chopped

1 small red onion, chopped

2 cloves garlic, minced

1 tsp dried oregano

1 tsp dried basil

1 tsp paprika

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)


Directions:


Preheat Oven: Preheat your oven to 375°F (190°C).

Sear Chicken: In an oven-safe skillet, heat olive oil over medium-high heat. Season chicken with salt, pepper, oregano, basil, and paprika. Sear the chicken until browned on all sides.

Add Veggies: Add the bell pepper, onion, and garlic to the skillet. Cook until vegetables are softened.

Add Rice and Liquid: Stir in the rice, diced tomatoes, and chicken broth. Bring to a simmer.

Bake: Cover the skillet with a lid or foil and transfer to the preheated oven. Bake for 20-25 minutes or until the rice is cooked and the liquid is absorbed.

Serve: Garnish with fresh parsley and serve with lemon wedges. Enjoy this Mediterranean delight straight from the oven!
