Mexican Carne Asada Steak Marinade

Ingredients for Marinade:
2 lbs flank steak (or skirt steak)
4 garlic cloves, minced
1/2 cup fresh cilantro, chopped
1/4 cup fresh lime juice (about 2 limes)
1/4 cup fresh orange juice (about 1 orange)
1/4 cup soy sauce
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon smoked paprika
1 teaspoon ground black pepper
1/2 teaspoon salt
1/4 teaspoon red pepper flakes (optional for heat)
1 tablespoon white vinegar
1 small onion, finely chopped
For the Carne Asada Plate:
Grilled peppers (Anaheim or poblano peppers)
Grilled onions
Guacamole
Mexican rice
Refried beans
Pickled red onions
Instructions:
Marinate the Carne Asada:
In a bowl, combine all marinade ingredients: garlic, cilantro, lime juice, orange juice, soy sauce, olive oil, cumin, chili powder, paprika, black pepper, salt, red pepper flakes, and vinegar.
Place the flank steak in a large resealable bag or shallow dish and pour the marinade over the steak. Make sure the steak is well coated.
Seal the bag or cover the dish and refrigerate for at least 2 hours, or ideally, overnight for maximum flavor.
Grill the Carne Asada:
Preheat the grill to medium-high heat.
Remove the steak from the marinade and let it come to room temperature for about 15 minutes before grilling.
Grill the steak for 3-5 minutes per side, depending on your preferred level of doneness (medium-rare is recommended).
After grilling, remove the steak from the grill and let it rest for a few minutes before slicing.
Prepare the Sides:
Grill the peppers and onions on the same grill until they have nice char marks and are tender.
Prepare guacamole with mashed avocado, lime juice, cilantro, and diced tomatoes.
Make Mexican rice and heat up refried beans for your sides.
Serve:
Slice the carne asada against the grain into thin strips.
Serve with the grilled peppers, onions, rice, beans, guacamole, and pickled red onions on the side.
