Mexican-Spiced Chicken Drumsticks with Yellow Rice

Juicy, flavorful chicken drumsticks seasoned with bold Mexican spices, paired with vibrant yellow rice and tender green peas for a colorful and hearty meal. Perfect for dinner any day of the week!
Ingredients
For the Chicken Drumsticks:
6 chicken drumsticks
1 tbsp olive oil
1 tsp chili powder
1 tsp smoked paprika
1 tsp ground cumin
½ tsp garlic powder
Salt and pepper, to taste
For the Yellow Rice:
1 cup long-grain rice
2 cups chicken broth
1 tsp turmeric or annatto powder
1 clove garlic, minced
½ cup green peas (fresh or frozen)
1 tbsp olive oil
For Garnish:
Fresh cilantro, chopped
Instructions
Season the Chicken:
In a bowl, coat the chicken drumsticks with olive oil. Mix the chili powder, smoked paprika, cumin, garlic powder, salt, and pepper. Rub this spice blend all over the drumsticks. Let them marinate for 15–30 minutes for deeper flavor.
Cook the Drumsticks:
Preheat the oven to 375°F (190°C). Place the drumsticks on a baking sheet lined with foil. Bake for 35–40 minutes, flipping halfway, until the chicken is golden and cooked through. For extra crispiness, broil for 2–3 minutes at the end.
Prepare the Yellow Rice:
Heat olive oil in a pot over medium heat. Sauté the minced garlic until fragrant. Add the rice and turmeric, stirring to coat the grains. Pour in the chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes. Stir in the green peas during the last 5 minutes of cooking.
Serve:
Plate the yellow rice and top with the roasted chicken drumsticks. Garnish with fresh cilantro for a burst of flavor.
