Pappardelle bolognaise au cœur

Ingredients
1lb ground beef or italian sausage
1 tablespoon of olive oil
1 medium onion, diced
2 minced garlic cloves
1 red pepper, cut into cubes
1 carrot in cubes
1 can (15 oz) of crushed tomatoes
1/4 cup tomato paste
1/2 cup beef broth
1/2 teaspoon dried oregano
Salt and pepper to taste
8 oz de pâtes pappardelles ( egg pasta )
Fresh basil leaves for garnish
Directions
Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until brown, about 5. Drain any excess fat.
Add the onion, garlic, pepper and diced carrots to the skillet. Cook until vegetables are tender, about 5 minutes.
Stir in crushed tomatoes, tomato paste, beef broth, oregano, salt and pepper. Simmer and cook for 15-20 minutes, until sauce thickens.
Cook the pappardelle pasta according to package instructions. Drain and add to skillet, tossing to coat sauce.
Garnish with fresh basil and serve hot.
