Roasted Chicken with Cranberry Sauce

Tasty and Festive

Give your grilled chicken a special touch with this delicious cranberry sauce, perfect for adding a sweet and sour flavor and vibrant color to your dish.


Preparation time: 20 minutes

Cooking time: 1 hour 20 minutes

Servings: 5


Ingredients

For the Chicken:


1 whole chicken

1/2 bar of butter, cubed

Salt and pepper to taste

For the cranberry sauce:


200g of fresh blueberries

50 g of dried cranberries

2 cloves of garlic

2 tablespoons of honey

100 ml of Orange Juice

2 tablespoons of butter.

2 tablespoons of parsley, finely chopped.

Sal al gusto

Pepper to taste

Instructions

Preheat the oven:


Preheat the oven to 180°C.

Prepare the Cranberry Sauce:


In a blender, place the dried cranberries, half the fresh cranberries, garlic cloves, honey and juice of orange. Blend until you get a homogeneous mixture.

In a skillet over medium heat, melt the 2 tablespoons of butter and enjoy the liquefied cranberry mixture. Cook until slightly thickens.

Add the rest of the fresh blueberries and sprinkle to taste. Cook for a few more minutes until blueberries are tender. Book up.

Prepare the Chicken:


Place the whole chicken in a baking pan. Insert butter cubes under the chicken skin to melt and keep the chicken juicy when baking.

Spray the chicken outside and inside to taste.

Baking the Chicken:


Cover the pan with aluminum foil and bake the chicken for 40 minutes.

Remove the foil and continue baking until the skin is golden brown and the chicken is well cooked, about 40 more minutes.

Servir:


Slice the chicken into pieces and place it in a serving tray. Sprinkle with cranberry sauce and sprinkle fresh parsley on top to give it a pop of color and flavor.

Suggestions to Serve:


Accompany grilled chicken with mashed potatoes, roasted vegetables or a fresh salad.

Consejos:


If you prefer a milder sauce, you can sneak it in before serving.

You can substitute dried blueberries with dehydrated blueberries if you'd like.
