Shrimp and Avocado Sushi Rolls Sushi rolls filled with avocado, cucumber, and cooked shrimp, rolled in nori and sushi rice, served with soy sauce and pickled ginger – a delightful fusion of Japanese cuisine with a Western touch.
Ingredients
- 🍚 Sushi Rice – 1 cup, cooked and seasoned with rice vinegar
- 🦐 Cooked Shrimp – 1/2 lb, sliced lengthwise
- 🥑 Avocado – 1 large, sliced thinly
- 🥒 Cucumber – 1 small, julienned
- 🌿 Nori Sheets – 4 full sheets
- 🧂 Salt – to taste
For Serving
- 🥢 Soy Sauce – for dipping
- 🍣 Pickled Ginger – for garnish
- 🌶️ Wasabi – optional
Instructions
1. Prepare the Sushi Rice: Cook sushi rice according to package instructions. Season with rice vinegar and a pinch of salt, then let cool to room temperature.
2. Prepare the Filling: Slice the cooked shrimp, avocado, and cucumber into thin strips.
3. Assemble the Sushi Rolls: Place a sheet of nori on a bamboo sushi mat. Spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
4. Add the Filling: Lay shrimp, avocado slices, and cucumber strips horizontally across the rice.
5. Roll the Sushi: Using the bamboo mat, tightly roll the sushi away from you, pressing gently to seal the roll.
6. Slice and Serve: Slice each roll into 6-8 pieces. Serve with soy sauce, pickled ginger, and wasabi if desired.
