Southwest Grilled Chicken with Avocado Lime Sauce

A flavorful and refreshing dish that's perfect for a weeknight meal!


Ingredients:

For the Chicken:


1.5 pounds boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1/2 teaspoon cumin

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/8 teaspoon black pepper

For the Avocado Lime Sauce:


1 ripe avocado

1/4 cup lime juice

1/4 cup cilantro, chopped

1/2 teaspoon garlic, minced

1/4 teaspoon salt

1/8 teaspoon black pepper

Instructions:

Prepare the Chicken:


In a small bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper.

Brush the marinade over the chicken breasts.

Grill the Chicken:


Grill the chicken breasts over medium-high heat for 6-8 minutes per side, or until cooked through.

Make the Avocado Lime Sauce:


In a blender or food processor, combine avocado, lime juice, cilantro, garlic, salt, and pepper. Blend until smooth.

Serve:


Serve the grilled chicken with the avocado lime sauce.

Tips:


For a spicier dish, add more chili powder or a pinch of cayenne pepper to the marinade.

You can serve the chicken with your favorite side dishes, such as rice, potatoes, or a salad.
