Soy-Glazed Chicken with Chili & Basil

Ingredients:


- 4 boneless, skinless chicken thighs

- 1/4 cup soy sauce

- 2 tbsp honey

- 2 cloves garlic, minced

- 1 tsp fresh ginger, grated

- 1-2 red chili peppers, sliced (adjust to taste)

- 1/4 cup fresh basil leaves, chopped

- 1 tbsp vegetable oil

- Salt and pepper to taste

- Optional: Cooked rice for serving


Directions:


In a bowl, whisk together soy sauce, honey, minced garlic, grated ginger, and sliced chili peppers to create the marinade. Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).


Heat vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off, and season with salt and pepper. Place the chicken in the skillet and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice glaze.


During the last minute of cooking, add the remaining marinade to the skillet and let it bubble and thicken slightly. Stir in the chopped basil just before serving.


Serve the soy-glazed chicken over cooked rice, drizzling any extra sauce from the skillet on top. Enjoy the delightful combination of sweet, savory, and spicy flavors!
