Spicy Beef Stir-Fry with Peppers and Fried Rice

Ingredients:


For the Beef Stir-Fry:


1 lb (450g) beef sirloin or flank steak, thinly sliced

2 tablespoons soy sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

1 red bell pepper, thinly sliced

1 green bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

2 garlic cloves, minced

1-inch piece of ginger, minced

2-3 tablespoons chili paste (e.g., sambal oelek or gochujang, adjust to spice preference)

2 tablespoons oyster sauce

1 tablespoon sesame oil

2 green onions, chopped

Sesame seeds for garnish (optional)

For the Fried Rice:


3 cups cooked and cooled white rice (day-old rice works best)

2 eggs, beaten

1 tablespoon vegetable oil

1 small onion, finely diced

2 garlic cloves, minced

1 cup frozen peas and carrots (thawed)

2 tablespoons soy sauce

1 tablespoon sesame oil

Salt and pepper, to taste

Instructions:


1. Marinate the Beef:


In a bowl, toss the beef slices with soy sauce and cornstarch. Let it marinate for 10-15 minutes.

2. Cook the Fried Rice:


Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until just cooked. Remove from the skillet and set aside.

Add a bit more oil if needed, then sauté the onion and garlic until fragrant. Add the peas and carrots, stirring for 2-3 minutes.

Add the rice, breaking up any clumps, and stir-fry for 3-4 minutes. Pour in soy sauce and sesame oil, tossing to combine evenly.

Return the scrambled eggs to the skillet, mix well, and season with salt and pepper. Set aside.

3. Cook the Beef Stir-Fry:


Heat vegetable oil in a large wok or skillet over high heat. Add the marinated beef and stir-fry for 2-3 minutes until browned. Remove the beef and set aside.

In the same pan, add a little more oil if needed. Sauté the garlic, ginger, and chili paste for 1 minute.

Add the bell peppers and stir-fry for 3-4 minutes until slightly tender but still crisp.

Return the beef to the pan and add oyster sauce and sesame oil. Stir well to coat everything evenly.

Toss in the green onions and cook for 1 more minute.

4. Serve:


Serve the spicy beef stir-fry on top of or alongside the fried rice. Garnish with sesame seeds and extra green onions if desired.
