Spicy Cashew Chicken

Ingredients:
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 cup cashews
1/2 cup all-purpose flour
1/4 cup cornstarch
1 egg
1/4 cup milk
1/4 cup soy sauce
1 tablespoon sriracha
1 tablespoon hoisin sauce
2 tablespoons brown sugar
2 garlic cloves, minced
1 tablespoon rice vinegar
2 teaspoons sesame oil
1/2 teaspoon crushed red pepper flakes (optional)
Green onions, sliced (for garnish)
Sesame seeds (for garnish)
Cooking oil for frying
Instructions:
Prep the Chicken: In a bowl, combine the egg and milk. Dip the chicken pieces in this mixture. In a separate bowl, combine flour and cornstarch, then coat the chicken with this mixture.
Fry the Chicken: Heat the cooking oil in a pan over medium-high heat. Fry the chicken pieces in batches until golden and crispy. Drain on paper towels and set aside.
Prepare the Sauce: In a saucepan, combine soy sauce, sriracha, hoisin sauce, brown sugar, garlic, rice vinegar, sesame oil, and red pepper flakes. Simmer over low heat for 3-5 minutes until the sauce thickens slightly.
Toast the Cashews: In a dry skillet, lightly toast the cashews over medium heat until fragrant, about 2-3 minutes.
Assemble: Add the fried chicken to the sauce, tossing to coat evenly. Stir in the toasted cashews.
Serve: Garnish with green onions and sesame seeds. Serve hot with rice or noodles.
