Spicy Korean Gochujang Beef Noodles

Ingredients:
250g (9 oz) beef sirloin or flank steak, thinly sliced
250g (9 oz) ramen noodles or rice noodles
1 tbsp sesame oil
2 garlic cloves, minced
1 small onion, sliced
1 bell pepper, thinly sliced
1 cup shredded carrots
2 green onions, chopped
1 tbsp vegetable oil (for stir-frying)
For the Gochujang Sauce:
2 tbsp gochujang (Korean chili paste)
1 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp honey or brown sugar
1 tbsp rice vinegar
1 tsp sesame oil
2–3 tbsp water (to loosen sauce as needed)
Directions:
Cook noodles according to package instructions, drain, and set aside.
Mix all gochujang sauce ingredients in a small bowl and set aside.
Heat vegetable oil in a large pan or wok over medium-high heat.
Add garlic and onion; stir-fry until fragrant (1–2 minutes).
Add beef slices and cook until browned, about 3–4 minutes.
Stir in bell pepper and carrots. Cook another 2–3 minutes until just tender.
Add cooked noodles to the pan and pour in gochujang sauce.
Toss everything together for 1–2 minutes until evenly coated and heated through.
Finish with a drizzle of sesame oil and top with green onions.
