Ingredients:
- 1 lb boneless, skinless chicken thighs, sliced into thin strips
- 2 tbsp vegetable oil
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tbsp rice vinegar
- 1 tsp red pepper flakes (adjust to taste)
- 1/2 tsp black pepper
- 2 green onions, chopped for garnish
- Sesame seeds for garnish (optional)
Directions:
Heat a cast iron skillet over medium-high heat and add the vegetable oil. Once hot, add the sliced onions and sauté until they begin to caramelize, about 5-7 minutes. Remove the onions from the skillet and set aside. In the same skillet, add the sliced chicken and cook until browned and cooked through, about 5-6 minutes. Add the minced garlic and grated ginger, cooking for an additional minute until fragrant.
In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, red pepper flakes, and black pepper. Pour this sauce over the chicken in the skillet, stirring to coat evenly. Allow the mixture to simmer for 2-3 minutes, letting the sauce thicken slightly.
