Ingredients:
- 2 lbs chicken thighs, boneless and skinless
- 1/2 cup soy sauce
- 1/4 cup honey
- 1/4 cup sriracha sauce
- 2 tbsp rice vinegar
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp sesame oil
- 1/2 tsp black pepper
- 2 green onions, chopped (for garnish)
- Sesame seeds (for garnish)
Directions:
In a large bowl, whisk together soy sauce, honey, sriracha, rice vinegar, minced garlic, grated ginger, sesame oil, and black pepper to create the marinade. Add the chicken thighs to the bowl, ensuring they are well coated. Cover and marinate in the refrigerator for at least 1 hour, or overnight for deeper flavor. Preheat your grill or a skillet over medium-high heat. Remove the chicken from the marinade, reserving the marinade for later. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and caramelized. In a small saucepan, bring the reserved marinade to a boil and simmer for 5 minutes to thicken. Brush the thickened sauce over the chicken during the last minute of cooking. Once cooked, remove the chicken from the heat and let it rest for a few minutes. Slice the chicken and drizzle with extra sauce, then garnish with chopped green onions and sesame seeds. Serve hot and enjoy the fiery, sticky goodness of this Dragon Fire Chicken!
