Ingredients:

For the Chicken:

2 cups cooked chicken, shredded (or grilled and sliced)

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Juice of 1 lime

For the Street Corn Topping:

2 cups corn (fresh, frozen, or canned)

1/4 cup mayonnaise

1/4 cup sour cream

1/2 cup crumbled feta cheese

1 teaspoon chili powder

1 teaspoon garlic powder

1 tablespoon fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For Serving:

Corn tortillas

Avocado slices

Fresh cilantro

Lime wedges

Directions:

Prepare the Chicken:

In a skillet over medium heat, add olive oil. Stir in the shredded chicken, chili powder, cumin, salt, pepper, and lime juice. Cook until heated through, about 5-7 minutes. Set aside.


Make the Street Corn Topping:

In a bowl, combine corn, mayonnaise, sour cream, feta cheese, chili powder, garlic powder, cilantro, lime juice, and salt. Mix well and adjust seasoning to taste.


Warm the Tortillas:

In a dry skillet, heat the corn tortillas for about 30 seconds on each side until warm and pliable.

Assemble the Tacos:

Place some of the seasoned chicken on each tortilla, followed by a generous spoonful of the street corn mixture. Top with avocado slices and fresh cilantro.
