Sweet And Spicy Thai Chicken

Savor a zesty twist on Thai chicken with sweet chili sauce and fresh basil, delivering a perfect balance of spicy, sweet, and savory in every bite!
Ingredients
1 lb (450g) chicken breast, cut into bite-sized pieces
2 tablespoons vegetable oil
3 cloves garlic, minced
1 inch ginger, grated
1⁄4 cup soy sauce
1⁄4 cup sweet chili sauce
2 tablespoons fish sauce
2 tablespoons brown sugar
1 tablespoon lime juice
1 teaspoon red pepper flakes (adjust for spice preference)
1 bell pepper, sliced thinly
1 small onion, sliced
1⁄4 cup fresh basil leaves
Cooked jasmine rice, for serving
Instructions
In a medium-sized bowl, combine the soy sauce, sweet chili sauce, fish sauce, brown sugar, lime juice, and red pepper flakes. Stir until the sugar is dissolved and set aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and grated ginger, stirring constantly, and fry for about 30 seconds until fragrant.
Add the chicken pieces to the skillet. Cook for 5-7 minutes, stirring occasionally, until the chicken starts to brown and is nearly cooked through.
Add the sliced bell pepper and onion to the chicken, stirring well to combine. Cook for another 3-4 minutes until the vegetables are tender but still crisp.
Pour the prepared sauce over the chicken and vegetables. Stir well to coat all the ingredients evenly. Let it simmer for another 3 minutes until the chicken is fully cooked and the sauce thickens slightly.
Remove the skillet from heat and stir in the fresh basil leaves.
Serve hot over a bed of cooked jasmine rice.
Note
For a more authentic flavor, use Thai basil instead of regular basil.
Adjust the red pepper flakes to your heat preference. Start with less if you're sensitive to spice and add more as needed.
This dish can also be made with different proteins like shrimp, tofu, or beef.
Consider adding additional vegetables like broccoli, snow peas, or carrots for more texture and color.
