Intro: Fresh, vibrant, and bursting with flavor, this salad is a summer must-try that will brighten any meal! Treat your taste buds to the creamy goodness of burrata paired with juicy tomatoes!

Ingredients:

- 8 oz burrata cheese

- 10 oz grape or cherry tomatoes (assorted colors, halved)

- ¼ cup basil pesto

- Salt and freshly ground black pepper, to taste

- Juice of ½ lemon (freshly squeezed)

- Fresh basil leaves (whole or chopped)

Instructions:

1. Prepare the Base: Start by halving the assorted grape or cherry tomatoes. Arrange them artfully on individual plates or in a large serving dish, creating a colorful base for your salad.

2. Add Burrata: Next, take the burrata cheese and place it among the tomatoes. You can keep the burrata whole for a creamy surprise, or slice it in half for easier serving and a more inviting presentation.

3. Drizzle with Pesto: Generously drizzle the basil pesto over the tomatoes and burrata, allowing the vibrant green hue to enhance the dish's visual appeal and flavor.

4. Brighten with Lemon: Squeeze the fresh juice of half a lemon over the entire salad. This zesty addition will elevate the flavors to a whole new level, adding a refreshing touch.

5. Season to Perfection: Finish by sprinkling salt and freshly ground black pepper to taste. The seasoning will enhance all the flavors, making each bite delightful.

6. Garnish: Finally, add fresh basil leaves on top for a fragrant finish and a burst of herbal freshness.

7. Enjoy: Serve immediately as a light appetizer or side dish. This salad pairs wonderfully with crusty bread or grilled proteins for a complete meal.
