Get ready for a fiesta of flavors with this Mexican Chicken with Cheese Sauce recipe! Juicy, seasoned chicken is smothered in a rich and creamy cheese sauce. This easy and comforting dish is perfect for a family dinner or a fun night in with friends.


Ingredients:


4 boneless, skinless chicken breasts

1 tbsp olive oil

1 tsp chili powder

1 tsp cumin

1 tsp garlic powder

1/2 tsp paprika

Salt and pepper to taste

1 cup shredded Mexican cheese blend

1/2 cup cream cheese

1/2 cup heavy cream

1/4 cup diced green chilies (optional for extra kick)

Fresh cilantro for garnish


Directions:


Season the Chicken:

In a small bowl, mix together the chili powder, cumin, garlic powder, paprika, salt, and pepper. Rub this spice mixture evenly over both sides of the chicken breasts.


Cook the Chicken:

Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 6-8 minutes per side, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.


Make the Cheese Sauce:

In the same skillet, reduce the heat to medium and add the cream cheese and heavy cream. Stir until the cream cheese is melted and smooth. Add the shredded cheese and diced green chilies, stirring until the cheese is fully melted and the sauce is creamy.


Assemble the Dish:

Return the cooked chicken breasts to the skillet, spooning the cheese sauce over the top. Let everything simmer for a few minutes to allow the flavors to combine.


Garnish and Serve:

Garnish with fresh cilantro and serve with rice, tortillas, or your favorite Mexican sides.
