You can use this recipe for a whole beef loin tenderloin as a basic recipe when you want to cook a whole piece of beef fillet in the oven. For four people, the result is best with an even-thick piece from the middle piece of beef fillet. If you want to double the recipe and cook for many, the alternative is to buy a whole fillet. Then cut it into three larger pieces and pan fry each part separately.

Beef fillet in oven at low temperature

Beef tenderloin can be prepared in a variety of ways; grilled, fried, baked or why not sous vide? Regardless of which way you choose, this is an exclusive cutting detail that is perfect for parties and when you want to serve something luxurious. Beef fillet is at its best when it is cooked at a lower temperature in the oven. 125 c/ 260 f degrees is an optimal oven temperature so it is not stressed and becomes dry. When the meat has an internal temperature of 55–60°C (130-140f), it has been done medium, which makes the meat pink and juicy. Use a roasting thermometer and you will be sure when the meat is ready.

Best way to cook beef tenderloin in the oven

By first browning the meat, before putting it in the oven, you give the meat a tasty surface. This is called the Maillard reaction. Salt the meat before roasting and sprinkle with freshly ground pepper before putting the meat in the oven. In this way, you don't risk burning the pepper, which can give a bitter taste.

Some of the classic side dishes to serve with roast beef tenderloin are French fries, wedged potatoes or potato gratin. Sauces such as béarnaise sauce or red wine sauce are delicious to serve with. If you want to make it extra fancy, you can serve both sauces. Lightly cooked vegetables or a green salad lift the dish and add a fresh and crunchy texture.
