Yellow Rice with Spicy Beef

Ingredients (for 4 people):


- 250g Basmati rice

- 400g ground beef

- 1 onion, chopped

- 2 cloves garlic, minced

- 1 red bell pepper, diced

- 1 carrot, grated or diced

- 1 tomato, diced

- 500ml beef broth

- 1 tsp turmeric (for yellow color)

- 1/2 tsp cumin

- 1/2 tsp smoked paprika

- 1/2 tsp chili powder (optional)

- 1 tbsp soy sauce

- 2 tbsp olive oil

- Salt & pepper (to taste)

- Fresh coriander or parsley (for garnish)


Preparation:


Cooking the Yellow Rice:


Rinse the Basmati rice under cold water until the water is clear. In a saucepan, heat a tablespoon of olive oil, then add the turmeric and mix to release the aromas. Add the rice and stir for 1 minute, then pour in the hot beef broth. Cover and cook over low heat until the rice absorbs all the liquid (about 12 minutes).


Preparing the Spicy Beef:


In a skillet, heat a tablespoon of olive oil, then sauté the onion and garlic until translucent. Add the ground beef and cook until browned. Add the red bell pepper, carrot, and tomato, then season with cumin, smoked paprika, chili powder, salt, and pepper. Stir in the soy sauce and simmer for 5 minutes over medium heat.


Assembly and Serving:


Mix the cooked yellow rice with the spicy beef preparation. Adjust the seasoning and add a drizzle of olive oil if needed. Garnish with fresh coriander or parsley, and serve hot!


Tips & Variations:


Add peas or corn for extra color and texture. Replace the ground beef with shredded chicken or tofu for an alternative version. Serve with a lemony yogurt sauce for a refreshing contrast. Enjoy!
