Zesty Lime Cilantro Chicken with Creamy Avocado Dip

A refreshing and flavorful dish!


Ingredients:


For the Chicken:


1 pound boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon lime juice

1/2 teaspoon chili powder

1/4 teaspoon cumin

1/4 teaspoon garlic powder

1/8 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

For the Avocado Dip:


1 ripe avocado

1/4 cup Greek yogurt

1/4 cup mayonnaise

1 tablespoon lime juice

1 clove garlic, minced

1/4 teaspoon salt

1/8 teaspoon black pepper

Instructions:


Prepare the Chicken:


Combine Ingredients: In a bowl, combine chicken breasts with olive oil, lime juice, chili powder, cumin, garlic powder, cayenne pepper, salt, and pepper. Toss to coat.

Grill or Bake:

Grill: Grill chicken over medium-high heat for 6-8 minutes per side, or until cooked through.

Bake: Preheat oven to 400°F (200°C). Place chicken breasts on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until cooked through.

Make the Avocado Dip:


Combine Ingredients: In a food processor or blender, combine avocado, Greek yogurt, mayonnaise, lime juice, garlic, salt, and pepper. Blend until smooth.

Serve:


Serve the chicken with the avocado dip.

Tips:


You can use other cuts of chicken, such as boneless, skinless chicken thighs.

For a spicier dip, add a pinch of red pepper flakes.

Serve with your favorite side dishes, such as rice, quinoa, or roasted vegetables.
