Crispy Balsamic-Thyme Potato Torte

Ingredients


2 lbs potatoes, thinly sliced

1/4 cup balsamic vinegar

3 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon fresh thyme, chopped

Salt and pepper to taste

Grated Parmesan cheese (optional)


Directions


1. Preheat your oven to 375°F (190°C) and give a round baking dish a light greasing so nothing sticks.

2. In a mixing bowl, whisk together the balsamic vinegar, olive oil, minced garlic, chopped thyme, salt, and pepper. It’ll smell incredible already!

3. Arrange half of the sliced potatoes in the bottom of your dish, spreading them out as evenly as you can.

4. Drizzle half of your the balsamic mixture right over those potatoes, letting it get in between the layers.

5. Lay the rest of the potato slices on top and finish with the remaining balsamic mixture, making sure everyone gets a little love.

6. Cover the dish snugly with foil and pop it into the oven. Bake for 45 minutes, letting those flavors come together.

7. After 45 minutes, take off the foil and, if you’d like, shower some grated Parmesan over the top. Return the dish to the oven, uncovered, for another 15-20 minutes, or until the top is beautifully crispy and golden.

8. Let the torte sit for a few minutes once it’s out of the oven—it helps everything settle and makes slicing easier.

9. Serve up warm, and enjoy every flavorful, crispy bite!
